N2 can do the same thing. guinness is a a nitrogen brew no reason you can't make a nockoff at home. CO2 is better for beer though, too

Unfortunately to keep N in a liquid form it has to be kept really cold. I haven't used it for many years so I don't remember exactly how cold, but pretty effin cold.I totally forgot about that, the liquid to gas expansion ratio of CO2 is really high, If I remember correctly its around 500:1 or something.
In that case CO2 is much better, if N was stored as a liquid though it would be better. Its expansion ratio is higher.
