If you're more into the nuclear option, replace everything you can.
One machine shop I took my head to would only replace everything, another shop decades before only fixed the one leaking valve.
It's up to you.
Removing the head is a big (hazardous) job. I'd rather choose an option that ensured I wouldn't have to do it again.

I think he just means it’s a heavy chunk of metal and it can be harder to maneuver than you think. Especially if it’s still got the intake and exhaust manifolds still attached to it.
