@ 7000lbs you're pretty much out of the R2.8s comfort range, 4BT/6BT are tractor engines and will rattle your truck apart and be unpleasant to drive, 1HD is underpowered for the stock 80 IMO and you're well up over the 105 Series weight. You're really straddling a fence, you've either outgrown the truck or need to downsize your build.

I certainly wouldn't buy a current AWD sprinter: Bad torque split, open TC/diffs, not-so-low low range, no rolling engagement, noisy TC, parasitic MPG robbery, lots of reliability complaints on the $8000+ 3rd party drivetrain "upgrade". Some dealers/upfitters are charging up to $12K premium for a factory AWD. If you're set on a Sprinter, wait for 2022 models with Daimler 4Matic AWD (probably should wait for 2nd year in 2023) , or better yet go with a Quigley converted Ford Transit.

But really my advice to you is sell the 60 while they're fetching a premium and buy an older ~$-40-80K E350 Sportsmobile. Live in it, tow what you want with it, and rethink that when you're ready. Other than the long wheelbase you're not making too many trade-offs here and it will go far more places than a Sprinter.
