Switched my LC to Mobil 1 5w30 at 59K miles. I will only be driving it around 5K miles a year. Anyone see a problem leaving Mobil 1 in the LC for a once a year change interval?

No. Use a quality filter (no Fram) that will not breakdown and I think you are good.
FWIW, I use Mobil 1 5w30 Extended Life and the Mobil 1 filter. I bought my LC a few months ago with 38K and I'm going to be changing at 10K mile intervals. I'm thinking that this will be enough considering that I'm at 47K and the oil still looks pretty good.
