My e brake light isn't working when the brake is engaged. Any thoughts on how to fix this?
 
Depends on which you think is easier: removing the console or the dash. Either way, you need to verify that the hand brake switch connector has continuity and that the bulb is working. After that, assuming both are good, pull out the FSM/EWD and work from the fuse block to the switch. You will find the problem.

Are we also assuming that all other dash lamps work?

You need to determine if it's the bulb or the handbrake switch. The bulb is illuminated from the handbrake switch and the brake fluid reservoir cap. If you remove the cap and allow the float to slide to the bottom, the light should illuminate. If the light doesn't illuminate, then it is likely the bulb.
