Is there a specific "type/s" of switch if one wanted to replace OEM switches, or fill in various blanks on the dash to use for lighting..etc etc

I have 3 blank areas below the factory dash clock that could be used, but the curve on the top edge might be a bit of a problem?

Looking at some of the "blue fire" or "mictuning" rocker types on Amazon

To me OEM is the only acceptable option for the curved area. You could repurpose rear defrost buttons for just about anything. Like you said, there are 3 open areas, but did you know that the furthest two "blanks" aren't removable and have no support structure for a switch to be placed there? Very odd.

Yup. Somewhere around here someone cut those out and eventually got a "curved" switch in there, but looked like more work than worth. All the others with standard toyota switch that are rectangle just grab some from a pick-n-pull for needed use.
