Thought I had an oil leak due to next to no oil being read from dip stick, but indy said no leak and that truck must be burning oil.

Truck has 210k miles on it.

Indy said it's an old engine and that burning oil is normal at this point.

What should I do? Just drive and keep an eye on the oil level or take action to rectify?

What could be wrong at this point? What is common for our engines?

I'd top it off and then monitor how much it's possibly burning over what mileage. Any blue smoke out the exhaust? Some amount of oil consumption is normal, in every car, you just need to baseline how much yours is using.

No, no blue smoke.
 
2UZFE is not generally an oil burner- even in its advanced years.

A- Check PCV (more than likely clogged)

B- Do a compression test

Do you have the correct dipstick?

Mine is at 250K miles and it does not burn oil even after 7 hour drive at 60-75+ MPH, You might have a faulty PCV valve.
