Jim, the next step is exactly what I was looking for. I'll pull the pan. Will I be able to see the cam from there or will I have to pull it out?

The cam lobes are visible from the oil pan side of the engine. Be aware that inverting the engine may allow lifters lifters to fall out, losing their matched location. First, pull the side cover and try to get the lifters out & stored in an egg carton so they can be put back in the right spot. If the lifters show excessive wear on the bottom, then it doesn't matter, as a reground cam & lifters are needed anyway. If the lifters do not come out easily, the engine can be flipped over for inspection, knowing the lifters are safely carboned in their bores & can't be mixed up.

Would an '87 2F head would work with the '75 block and flat pistons?

Yes, but the pictured block has FOD and needs bored over & new pistons.

If so, would the intake with EFI from said '87 work as well? The EFI isn't a must, but probably a plus.

The EFI intake manifold doesn't fit on a non-EFI head. The intake ports are cast much taller for the injectors.

Is there a difference between an EFI and carb intake?

Yes, totally different.
