I am in the process of having my injectios rebuilt and the guy said they are larger nozzels than the stock ones. I do not have a turbo and was noticing quite a bit of black smoke on acceleration and when pulling grades. Should I have him put them back to stock or keep them big? He said 2 of the 6 were not functioning right(200psi) off from the rest and they were dirty. Also I need a part # or source in California or close besides Specter(None in stock) for the copper crush gasket that goes on the end of the injector.
 
I'd be inclined to go with the stock nozzle and have them set up to the top end of the specification, if not a little higher.

Check or change your delivery valves as well.

Fuel volume is dictated by the injection pump and how it is adjusted. Your worn out nozzles have been contibuting to your smoke issues, but you should check delivery volume or install a pyrometer if there is more than just a little smoke on acceleration.
