I though I read somewhere that the 1fz-fe is a non-interference motor?

Oversimplified: If the timing beltbreaks on a non-interference design, there is enough clearance between the pistons and valves to prevent damaging contact. An interference design does not have sufficient clearance between those parts and engine damage would result from a broken timing belt.
Fortunately we have timing chains, so not much to worry about!
Chains can break too - I've seen plenty, especially in SMC's. Even in 3FE's, which are gear driven, a known failure is where the fibre center section separates from the metal gear portion. For all these reasons, a non-interference design is superior in case of catastrophic failure. The downside is (typically) lower performance for the same cubic inch displacement.
Anything's possible, but fortunately, reports of broken timing chains on the 1FZ-FE have been few and far between here on 'mud (knocking on wood!).
