i just bought a 1968 FJ40, I live in Arizona. I plan on making it a daily driver, and having it out on our freeways in AZ. I want to put in a V8 and a 5 speed transmission if that's possible.
What engine and transmission would be best?
What issues would I have with a transfer case fitting with a 5speed? Also would I have regear the axels in order to sit comfortably around 70 mph?

Any advice helps thanks.
 
My budget isn't too restricted. I don't want to go broke but I don't mind spending some to get it done right.
Would I need a different size driveshaft with the NV4500
 
I live in AZ and retired my 68 to my cabin in rural Northern AZ back in 2002. Before that just towed it up north and parked the rest of the time. You mention freeway driving but nothing about steering or brake upgrades. Suggest you drive it a while and think about how a going fifty year old vehicle will do in today's traffic. High profile, short narrow on leaf springs won't cut it for me. Research the early single ciruit brake lines and the non self adjusting shoes. They also have two wheel cylinders pre wheels that tkae some doing to adjust.
 
For your stated purpose, I would upgrade the brakes to a dual circuit power boosted system and the steering to power steering using a saginaw or FJ60 steering box. A modern LS series engine with an NV4500 is a solid choice. Advanced Adapters has the parts to mate your t-case, or FJ60 split case, to the trans.
