I have 34x10.50 LTB's on stock steels. Not sure why an inch would make a difference there, but the width may be in issue. They will look like balloon tires though. ;)
Reverse and First gear are not synchromeshed in that transmission. ie: it will always grind if you speed shift it. You can double clutch, or you can learn the "feel" of it. It takes some practice.

Exhaust is sweet! Are you going to run a hard top the whole time? If not, you may want to think about angling those pipes towards the sides a bit. Mine was sucking in fume until I did that.

Turn Signal
I just added an LED to the side of the housing. I did have to drill a 1/2" hole or something, but easy to do. Clean, Toyota, cheap, sturdy....not really sure why you would use the giant plastic floppies unless you just need to have year appropriate signals.
Just buy the early one's and be done with it. I put 1966 fj45 signals on my 40 and like them a LOT better. I added an LED side marker to them to keep the original wiring scheme, but that's all I did. Cheap, available, slimmer, and METAL!
And the 79 and up doors will fit on the earlier tubs. I'm running 79 doors on my 78 right now. Only the sharp eye will notice that the lower corner doesn't fit exactly and the 78 gasket fills that void very well for a leak free fit. I considered welding a bead on and making a "corner" but it...
