Hey Mikey, welcome! I applaud you for wanting to do the work yourself. Kelly (akarilo) definitely has more bananas on his belt than I, but I'm always happy to help when and where I can. I have no doubt that any one of the guys that have posted in this thread have the mechanical skills to help...
I've had some decent luck with stir fry by using a sauce made from fish sauce, soy sauce, and brown sugar. You cook it first then stir it in with your meat and veggies. It's still not quite the same as the real thing.
That looks and sounds fantastic. There is a Mexican restaurant here in town that serves the most authentic food (although served in American Tex Mex style) I have had North of the border. They make a great salsa and a delicious molcajete. But, my favorite is their slow roasted pork. I asked them...
