I can't speak for any other manufacturers or anything newer than the 90s but I do know the turbos on the MK2 Mr2 and MK4 Supra came water cooled from the factory. Those turbos lasted forever. Like anything it needs to be correctly installed and I'm sure there's plenty of documentation out there...

If technical wheeling is your thing I'm all down to watch people do it. The outcome of body damage / flipping the vehicle / flopping is too high for me. I just don't enjoy wrenching on a vehicle that much (would rather play guitar / snowboard / etc.)
