My current plan is to drive around without a spare so that I can use the hitch & throw the spare in the trunk on longer trips. Not ideal but I think it's better than the risk of compromising the integrity of the hitch by grinding it down.
Is the logic behind driving without a spare that 1) you can perform minor repairs or 2) you'll have to replace the tire anyways for catastrophic failures?
