I don’t know anything about Webers, and only a little about Aisins and various Carters. When a carb “craps out,” that’s usually from dirt or bad fuel, sometimes a float will have a catastrophic failure (leak) and fill with fuel and then the carb floods. I can’t speak to the mismatch issue...
So I’d say the stumble is from the fuel end of things to include potential vacuum leak (idle vacuum looks great though). Do you have a manual choke, and if so have you tried chocking it a bit to see if the loaded stumble goes away (and idle smooths out albeit at higher rpm’s)?
