I just spent the last several days looking through this entire thread for some good, southern recipe ideas and I've had two realizations:

1) I need to start eating red meat again (haven't in several years due to dietary reasons but y'all's briskets and steaks have made my cravings skyrocket).
2) I need a BGE.
 
Don’t sleep on the crockpot

Chili with steak, bacon, sausage and ground beef. And maybe a wee bit of chorizo

I couldn’t eat enough rolaids to digest that. But looks awesome.
 
Are the meats or the peppers the problem?
This batch was admittedly way meatier than most. But I thought Texans scoffed at beans in their chili ?!?

I matched the meats with fresh Pablano Anaheim cubanelle peños and dried ancho pequin and guajillo peppers.

Day six here. I’m over chili lol

Tonight’s a pizza night. Sans meats.

Bear with me if you will….

You see. It started with a simple chicken soft taco last Thursday.

That led to add a lil rice and chipotle cheddar and stuff that in a roasted poblano Saturday.

Which came full circle tonight with stuff that back in a soft taco wrap Monday dinner.

Tried something different this weekend, Smoked Sirloin Roast. Turned out great. Tender like a filet with a good beefy taste. Will grab another one next time I see them at Sam’s.
