I have a friend rebuilding my differentials for me, and he is concerned about the pitting on the spider gears. He recommends replacing them, what do you guys think?

The general rule for gears is that if the edges of the teeth are sharp they need to be replaced. If they are ring and pinion gears that are pitted the need to be replaced. If you have money and are able to find them I would swap them out.

I have a few matches sets of spider and side gears in boxes on the shelf.

If you where changing them
Either all new or all from same diff
 
How about throwing away the old spider gears and putting in a Aussie locker.
 
My guess, hobbing marks from when they were made, have seen them look like that. Would and have run them without issue, it's not like they turn with any speed, only what is needed on turns.
