..utilize the existing metal ambulance doors in a soft top setup? Planning to have a soft top but really prefer to have the metal doors in the back.
The truck is 1977 FJ40.
 
Not really, unless you cut the top half of the rear doors off. You can buy bolt on, not opening tailgates that are made to fill the gap when the top and ambulance doors are off.
 
Look at where the hinges are mounted. If they are above the tub (as they would be with ambulance doors) then they won't be there when you remove the top. No hingey, no door.
 
You would have to build a door frame to support them. Something like this:

Also the rear of the hardtop is angled from the waistline up where as the soft top is not
