Originally there was a temperature sensor on a little bracket bolted to the manifold. That wire connected to it. The sensor would trigger when the manifold cooling fan should turn off & on
 
It will look like this if it's still there:

That bracket in @Spike Strip ‘s photo is usually brazed to the PCV tube on a stock truck which makes it a little harder to get off. But pulling that tub off is arguably the easier way to get to the sensor as it can be a pain to reach in there
 
I can't really tell from your pix what's going on with yours, but there's a greenish (blue) single wire out of the loom that goes to one side of the large green connector; the other side of the connector (white wire) goes to the Thermo-switch under the intake.

If your thermo-switch is gone or not working, you can ground the green/blue wire to any chassis/fender bolt and your fan with run for about 15 mins (not a problem) every time you cycle the ign key. It's also a way to check to see if your carb fan is working (I suspect it's not, now ;) )...
