Applewood/Mesquite smoked, Kansas City-style spareribs. Grilled peaches with burrata and balsamic, which are my new favorite. Going to add some prosciutto next time, or ice cream instead of burrata and make it a dessert.

Trying smoked pineapple brined ribs w/a brown sugar coffee spice rub tonight.

If anyone is up for an easy spice rub, this one was delicious.

2-TBS brown sugar
2-TBS paprika
1-TBS cayenne
1-TBS onion powder
1-TBS garlic powder
1-TBS pink salt
1-TBS black pepper
1-TBS ground coffee
 
Split, how did the pineapple brine work out? The one time I tried it, I didn't like the texture of the meat imparted from the acidic pineapple brine marinade. But fine tuning the solution and length of time definitely plays a roll.

I was concerned about that. Thinned it 50/50 with water, soaked overnight. Did luck out as they didn't get that mushy texture.

How about a bacon wrapped stuffed pork loin? Gave it a little smoke and finished in the oven.

Wife was out of town and SNF was on. So I️ did some wing experimenting. Turned out awesome. Some of the best sports bar style wings I’ve had.

30min brine, dried, coated in cornstarch and pepper. Grilled on upper grate direct heat at 375F. Basted with franks wing sauce after 15mins. Grilled until 185F IT. Subtle wing sauce flavor. Fries weren’t bad either.

Top Rack is pork steak, I take bone in pork butt and cut 2-3 inch steaks. Season with my brisket rub which is mostly salt, pepper and small amount of garlic and onion salt. I sometimes spray with apple juice or mop with a water, mustard and onion mix I stole from Snow's BBQ. This challenges my brisket for the wifes favorite.

of ribs and then a whole chicken marinaded in a Hawaiian sauce called Huli Huli. Just playing around and smoking with pecan.

Also have to throw in the sacrilegious smoker. I was a ardent non pellet cooker until I tried a small one then I invested in this guy. I have to say this spoils you. I have cooked for some large groups with it and it simply creates incredible taking Q!

Cured and smoked turkey drums (Disney-style Smoked Turkey Legs from amazingribs.com). 1:1 Apple:Hickory. I have to temper down the hickory when smoking for the wife and this mix works well. I got tied up on a house project and these went about 25* over (AHH!) but they still turned out tender from the 24 hrs in the brine, just not as moist. Stove Top stuffing for the comfort food win! Yep, that was the wife's favorite part.

What isn't on the grill. Went through 20lbs of charcoal in the last 4 days.

Cooked a lunch pizza, ribs, brined and maple syrup glazed pork belly, Korean marinaded pork belly, Kansas City-style spare ribs, pork burnt ends and a bunch more on New Years Day.
