Hello I am in need of some new wheels for my project.

I am hoping to use the current tires on my Tacoma.

size 265/70 R17 Cooper Stt

I am having issues figuring out what size 17 inch wheel I will need to look for so that they will fit.

On Coopers site they say that the tires need at least a 7-8.5 width wheel.

Through searching on Mud it looks like I need a 3.5 inch offset as well

So by deduction I should look at 17 inch wheels that are 7-8.5 inches with a 3.5 offset? (am I overthinking this?)

What bolt pattern should I look for when I am browsing?

So, using your info and what I know about oem fj40 wheels... you need a 17x(7 to 8.5) 6(lug)x5.5"(bolt pattern), with a 3.50" baskspace... . if they ask "centerbore", it's 4.25".

If you look closely at the front of your oem fj40 wheels, you should find 15x5 1/2-JJ(lug pattern 6x5.50")001 (some character) 178 (for Jan 78).

I doubt you will find 17" wheels with 3.50" backspacing... you will likely need to buy a 4.50" backspace and use a 1" spacer... other may provide more info.

Disclaimer: I don't know if your Coopers info is correct.
