Hoping somebody can help me out here:

Having an issue with the switches i've been putting in and throwing it out to the wider audience for possible solutions.

Im running them through relays, negatively switched. Here is the wiring diagram im working off

And this is the diagram that the seller provided for the switch.

Since i'm negatively switching, instead of running it to the Battery +ve im running it to earth.

But then i found this, which seems to be opposed to the other, although this switch has an extra terminal so not sure.

The issue im having is that the main light on the switch is illuminated while the accessory is off and when the switch is turned on the accesory is going on but the light is going off, this should be reversed.

The first step is to determine EXACTLY which Carling switch you have purchased:

http://www.carlingtech.com/rocker-switches-sealed

and find the spec sheet for it. Then you will know how to wire the indicator light. I presume from your pictures that you have successfully wired the 'dash/backlight' of the switches so that part works correctly?

Here's how I wired the specific switches that I used (ARB difflock switches, with bulbs, not LEDs) on my patrol (no dimmer):
