Ok I'm sure it's like beating a dead horse but has anyone sourced a mud tire recently in this size or metric equivalent?

Not any radial dot legal tires that I am aware of. Bfg makes race only tires in that size.

There is the Interco Super Swamper TSL Q78-15 which is approximately a 35X11R15 sized tire.
