Seems like people are beef/meat curious in here.........this is your chance to ask questions and let me use my mental powers to either further educate, explain or possibly debunk myths about Gods tasty animals........

Where can a consumer buy the finest cuts of meat? Obviously, the grocery stores don't sell 'em.

you're best bet of finding good meat is at specialty stores or small butcher shops. Surprisingly Whole Foods have nice well aged beef...and will cut to order.

Questions you should ask the butcher are
1. what grade of beef is it
2. how long do you age it and how do you age it - wet or dry
3. is it cut from a "beef" animal and not a dairy cow - i.e. what part of the country does it come from. If he says NJ, WI, or any known dairy state then you have your answer

If you ask these questions you will less likely get s***ty beef.

Yea, where's the PRIME??

careful when you say "prime" ..... Prime rib is usually USDA Choice or Select....

Make sure you see USDA in front of Prime, Choice, and Select

Also Dairy animals grade out as USDA prime as well, but are no where near as good as a USDA Prime beef animal

I asked the "butcher" at Publix if they could get some Kobe beef.. he got pissed and said the meat they sell is better than Kobe. Why would that make him mad?
 
Why don't the grocery stores carry ground chuck on a regular basis?

I've been buying chuck roasts and grinding my own.

he is a fxxxing douche - he prolly was sick of hearing the buzz word Kobe....

Most consumers are dumb about meat and will buy anything that the butcher says.

Publix beef blows - also, they might be using CO to keep the red color.

Good beef will only keep a bright red for 18 hours and then turn gray - most grocery store beef will stay red for 3-4 days
 
Is it possible to visually or otherwise tell if a piece of beef will be tender or not, other than asking the questions you already mentioned.

What i am asking is are there certain things to look or feel for?

Obviously diffrent cuts of meat will be different.

grocery stores are afraid of ground beef......pretty much all ecoli cases come from ground beef

you are better off grinding your own..

And don't piss off the butcher... but if he answers yes then you need to sympathize with him and say:

It must be awfully hard to stand on those boards all day. :rolleyes:
