The later model instrument clusters are significantly different in terms of wiring. My '81 is modular with a single multi plug connection, for instance.
My first thought, is where are you finding 34" tires...haha
I don't think you'll have too much issue, rubbing in the front of the back wheel well is the first place you'll have issues...

Great question, as "Coral" I think of a almost red color, but if you look at the pictures, it almost seems like a light brown with a red tint... very deceptive color in my opinion...

Your spring perches are pretty significant, they are also taking away the clearance you are looking to gain. You'll gain some clearance back, once you've added upper shims to center the knuckle and axle relationship.
That should be the gate to recirculate your inside air, the foam is used as a sealing surface. I can't tell you what the thickness is. On a side note, you'll have to keep that set to only pull outside air in the winter, else you'll ice up all your windows due to all the condensate you'll produce...
Also make sure your heat riser is working properly. I drove a '68 40 for many years in Fairbanks, it had headers at the time and in those colder temps it would run like what you describe, until I put a coolant heat riser on the manifold.
