A 10.50'' wide tire on a 5.5'' rim is going to let you air down just fine. If you had a 10.50'' tire on a 10'', then you would not be able to air down as much. It's all about the tire to rim ratio.
 
When instructing folks new to off road we teach start at 20 psi and see how that foot print is then go down from there if needed. We usually end up around 15 psi for decent contact patch with no worry of breaking a bead. I myself like even lower than that but terrain dictates really.
