Since I am in a good mood (beer) and we're on this subject I am currently shooting another video on some pork stakes marinated overnight. It will be up before the end of the day.
 
Nice job. I'm not a big fan of pork steak, but it looked pretty tender. I do like pork hops though. I might have to come up with a smoked, smothered pork chop.
 
It's really easy to mess the pork stakes up. If you don't marinate them in some liquid they will turn up very dry and hard.
With beef, I mostly put on a simple dry rub. The fat inside keeps it moist and tender.
