1-2# red snapper filets boned
1# fresh roma tomatoes
1/2 cup fresh chopped basil
2 Tbs chopped garlic
1 6oz can tomato juice
White wine
2 Tbs Olive oil

blanch, peal, seed and chop tomatoes

Infuse olive oil with 1 Tbs of garlic
sear fish filets on both sides, remove to 325 oven

Add tomatoes and remaining garlic to pan, add tomote juice and wine as required to prevent burning until tomatos ar reduces by 50%. Add 1/2 of the fresh basil. Cook until the basil wilts. Add to fish. Finish in oven for 5-10 minutes. Serve fish with a covering of sauce garnished with remaining basil.

Brown rice as a side.

I can eat like this and stay healthy.
