I waited tables during college at a Mexican Restaurant for 4 years, and they had something called jalapena cream cheese. Great on about anything, but primarily chimichangas. Wish I could find the receipe for you all to give it a try... damn it was good stuff.

| Tapatío is one of my current favorites. Tobasco is classic on stuff like eggs and in Bloody Marys.
Rooster Sauce for anything Asian.

Believe me, I like hot and can handle some really hot stuff. That "Daves" is basically not edible, or if you do eat it, you will be sorry for a long time both today and tomorrow, (possibly today twice).
Dont touch the "Spontaneous combustion or "Endorphine rush" sauce either. These are all killers...OK if you put a drop or two in a bowl of chili, but 3/4 drops is even pushing it.

| Mrs. Renfros habanero salsa used to be pretty good and it was the hottest off the shelf supermarket salsa I have ever had.
I think they changed the recipe in the last year or so and tuned down the hotness. It is now just basic hot salsa, which has no actual heat.
Kills me when people say, "I like hot stuff" and then they try what you are eating and they almost die.
Funny stuff.

There are so many really good hot sauces out there, I don't know why anybody would prefer one that you can safely add only a drop or two to food. If you want to mess up your drinking buddies, though, it makes a killer prairie fire. (it ends the party for everybody who doesn't go to emerg)
I bought Todd's book used when I found out it existed and have been meaning to try to fill a fountain pen with some hot sauce and get him to sign it. |

| Dave's and similar stuff isn't sauce. It doesn't improve the flavor, it just hurts for no reason.
I'm having a bowl of mac and cheese with sriracha (Rooster) sauce right now. |

| Tabasco is my stand by and I use it on almost everything. For wings I use Franks, and I keep some Cholula around for occasional use.
The rest?
Meh. Most just bring heat without adding flavor.
