When I was a kid in Oregon we did this one when we were trout fishing.
Catch and clean a trout. Build a small fire with alder twigs and branches, while it burns down to coals stuff the inside of the trout with wood sorrel and wild onions. Wrap the fish in foil, bury it in the coals. Cover the whole pile with gravel.
Catch some more fish.
When lunch time rolls around dig up the pouches. Great with a hand full of huckle berries.
