I did that, works good.
I used the originals as templates for aluminum sheet, unwrapped the edges of the vinyl and spray adhesive the whole thing on to the aluminum, wrapping the vinyl around the aluminum so it looks original. I welded hinges to the aluminum and then used sheet metal screws to fasten them to the floor (under the carpet, you can't see them) The hinges are nice but the panels only open about halfway because of the rear wheel hump. I think a L shaped catch would be better than the hinges. Flush compression latches on the top just hook on the sheet metal. Nobody ever even notices that they are there.

Its great to have all that storage.
