I need some help

I have a 66 FJ40 and a while back I installed a weber carb on it because the original carb was beyond repair. The weber 32/36 seems to work great when it comes to starting, idling and slow acceleration but when it is under heavy acceleration its a whole different beast. Heres my problem, when I try to accelerate quickly and I mean pedal to the floor as quickly as possible the engine will almost die like it is either getting to much fuel or not enough. I did notice today that my electric choke is fully open all of the time and if I would hold the choke about half way closed and then accelerate quickly the engine seemed accelerate much smoother and didnt quite act like it wanted to die. I live in lafayette and if anyone lives in the city and is familiar with carburetors I beg you please help me out. I have a hard time explaing the problem so it would be easier for someone to actually hear it. I think I possibly may have to re=jet the carb but I am really just guessing at this point.
