They ruined a perfectly good engine, and they are wanting to replace it with a used engine which you know nothing of the history. If I were you, I would push for a brand new Toyota engine, at least the long block and have them install all the useable good stuff off the current engine. Remember, THEY are at fault, not you. Don't SETTLE for what they want to give you, they are only trying to keep THEIR costs down.
