If you're brave and work quickly you could use the rev limiter as your rpm reference.

You could also calculate your final drive ratio and calibrate in motion via the speedometer.

Or take the rear driveshaft out and use the speedometer as above, but while stationary.

More outlandish ideas:

Use a laptop with a microphone and spectral analyzer, there should be a good bit of power at 2*engine frequency (rps).
