This is kind of irrelevant.
Think of this, that oil sits in a vat all day at 375 deg F up until it is poured into its waste container. There couldn't be that much water in it at that time. The only way damaging water can enter the oil really is if it is exposed to the elements.
I would be more concerned with tallows turning fluid under heat then gelling in your filter.
