I'm don't need something that smokes off the line, I'm used to driving the fzj80, and I drive like a grandma anyway on pavement. I just need something that doesn't feel extremely underpowered getting around, or have a hard time pulling hills on the freeway. Any more input?

It really depends on what gear ration you have. IIRC, some Taco's came w/ 3.91's, 4.10's, and 4.56's. I would be willing to bet the V6 has 3.91 or 4.10 and the 2.7's came with 4.56.
I have never owned a Taco, but I can tell you first-hand that my 4Runner (AT) w/ 4.10's and 33's sucked on the highway. Always hunting for a gear and downshifting on even the slightest incline.
I could only imagine that 5th gear is going to be pretty much useless.
